Invert sugar

(1/1)

nano-silver:
I was reading through https://www.cgcsforum.com/index.php?topic=674.msg3556#msg3556

The mixture to cook at 227+ degrees, can I assume this is F ie just under boiling point of water, 100 degrees C?

kephra:
Water boils at 212F at sea level.
As you cook a sugar mixture, the boiling point goes up as the water evaporates.
227F is 108C

nano-silver:
Oooops, I should have looked it up as F is not my 'native degrees' and my memory is not good.  :-[
