The mixture to cook at 227+ degrees, can I assume this is F ie just under boiling point of water, 100 degrees C?

Water boils at 212F at sea level.
As you cook a sugar mixture, the boiling point goes up as the water evaporates.
227F is 108C

Oooops, I should have looked it up as F is not my 'native degrees' and my memory is not good. :-[
